Growing wine the Constance way

Enjoy fine wines at La Paulée, hosted at Le Barachois Restaurant, Constance Le Prince Maurice

All this week in Mauritius, we’re hosting a number of special wine events culminating at the weekend with our first ever edition of La Paulée.

La Paulée is a salute to La Paulée de Meursault – a traditional gastronomic banquet gathering wine connoisseurs, winemakers, chefs and sommeliers to celebrate the end of the harvest in Burgundy, France.

Back in Mauritius, some exceptional wine growers are joining us for this very special event, as we share our passion and appreciation for the finest wines.

Every day this week, they are sharing their knowledge with our Constance sommeliers, and hosting dinners at Constance Le Prince Maurice.

Christophe Durand – South Africa Western Cape
 Domaine Dorrance

Located in the Heritage Square, one of Cape Town’s most iconic buildings, Domaine Dorrance has been created by French winemaker, Christophe Durand and his wife Sabrina. The secret to Christophe’s approach is to rely on unique vineyard sites, early picking and rigorous sorting.

The result? “…beautiful, healthy berries which shape a more balanced wine with a low pH, higher natural acidity and lower alcohol.”

Frédéric Magnien – Côtes de Nuit

Domain Magnien is a family affair with a long history stretching back generations. Located in Burgundy, the quality of Magnien’s wines reflect the meticulous care he confers on his vineyards. La Maison Frédéric Magnien began in 1995 with 21 barrels on five titles and now has around 1,000 barrels.

Frédéric buys grapes mainly in Chardonnay and Pinot Noir. Morey-Saint-Denis remains his main appellation with two Grands Crus and three Premiers Crus. Frédéric Magnien also extends to Chambolle-Musigny, Gevrey-Chambertin and AOC regions. He explores wine, barrels and similar livestock, aromatic diversity of Côte de Nuits terroir, and how to extend the passion of the winemaker.

On 28th June, this week of food and wine pairing culminates in Constance hosting The Night of La Paulée at Le Prince Maurice. The mouth-watering menu with wines, following aperitif, includes:
