Our Green Tiki Monk is served at the newly revamped Constance Belle Mare Plage – it’s a delicious combination of coconut rum and pineapple with chartreuse and a devilish dash of absinthe. It has a deep, rich intense aromatic flavour.

Ingredients
40 ml fat wash coconut butter rum
10 ml green chartreuse
1 dash absinthe
10 ml Home made Roasted pineapple syrup
40 ml Victoria pineapple juice
Method
Add all ingredients into a cocktail shaker. Shake for 10 seconds. Strain and serve over ice. Top up with crushed ice, garnish and add a straw.
