Meet The Chef
The chef behind this delectable dessert is Rasambimanana Sylvain, our pastry chef at Constance Tsarabanjina resort in magical Madagascar.
Sylvain is 39 years old and is from the spectacular island of Nosy Be.
He has been a valued member of the Constance Tsarabanjina team since September 2014 and before joining us, he worked in three other large hotels on Nosy Be (Andilana, Royal Beach and Corail Noir).

Meet The Chef
The master behind this divine recipe is Tyrie Philoe, a Seychellois, born on the 30th of September 1980 and from a family of five.
She started as a Commis at Constance Lemuria and one year later she was promoted as a Demi-chef-de-partie. During her four years with Lemuria, she received the opportunity to partake in a three-week pastry training in Germany, after having won the u-first cooking competition.
Tyrie started at Constance Ephelia resort as a chef-de-partie, promoted to Junior sous chef and now she is currently holding the post of Assistant Executive Pastry chef.
TRUE FACT: Her love for pastry started after one French chef from our Lemuria resort saw her passion towards pastry and her potential to work hard – and was then provided with the opportunity to work within the industry.

Meet The Chef
Meet the chef behind this jelly creation, 33 year old Chef Mukesh Singh from Uttarpradesh, India.
Chef Mukesh started as Commis III at Leela Hotels and Resorts Group in Kerala, he then accelerated to Commis II when he moved to Radisson Blu at Pune in India in 2011.
He started harnessing his talents in various hotels in India and then decided to move to Seychelles at Awani Hotels in 2016 to further his career. There he became a Demi Chef de Partie.
Later on, he joined Constance Halaveli and the rest is history.
TRUE FACT: On Christmas Eve of 2017, Chef Mukesh joined as a Chef de Partie at Constance Halaveli Maldives.

Very early in his career, Chef Nicolas spent time with renowned chefs such as Roland Durand and the British Marco Pierrez white.
Nicolas prizes himself in his expertise in French pastry and is a lover of citrus fruits and chocolate.
He is a valued chef at Constance Belle Mare Plage and treats every guest with his recipes that connote sophistication and creativity.
TRUE FACT: Nicolas has worked in several Michelin starred restaurants, including Le pré Catelan (Paris) and Le Negresco (Nice).

Meet The Chef
The master behind this chocolate sensation is 37 year old Stephane Labastide, executive pastry chef at Constance Prince Maurice.
Stephane loves the ability to be creative with his recipes and enjoys experimenting with ideas.
From 2002 to 2006 Stephane worked in pastry at Laduree, Champs Elysee then he went on to Plaza Athenee in Paris. After this, he worked in well known Alain Ducasse restaurants.
Alain Ducasse received three Michelin stars with three restaurants: Louis XV at the hotel de Paris Monte Carlo, Alain Ducasse at Plaza Athenee in Paris and Alain Ducasse at the Dorchester in London.
Later on, Stephane spent some time in Seychelles in March 2015 where he met his beloved and then settled in Mauritius and joined Constance Prince Maurice team.
TRUE FACT: Stephane won several competitions at Bernard Loiseau Culinary Festival in 2016, 2017 and 2019.
