Our Blue Penny Cellar is leading this culinary innovation where at our guests can enjoy a Wine Flight experience to taste and pair wines by the glass with tapas, cheese from all over the world, oysters and Iberian ham. This is a fine dining experience like no other as you’ll be eating and drinking inside a cellar surrounded by 15,000 bottles from 1,300 wineries from all over the world. Main dishes include the mouth-watering roasted red mullet, onions marmalade and cep mushroom, marrow bone and snipefish sauce, and the delicious Tender veal cheek, carrot, tonka fava bean and fine celeriac and cocoa juice.
For wine lovers, the Blue Penny Cellar has a sumptuous selection of exclusive, unique and rare bottles. From reds such as Château Ausone (1er Grand Cru Classé A 1989) and whites such as Montrachet (Etienne Sauzet 2010) to the Spanish Ribera Del Duero (Reserva Especial – Vega Sicilia) and Italian Bolgheri DOC (Sassicaia – Tenuta San Guido 2010). Or to celebrate how about a Champagne: de Salon Blanc de Blancs – Brut- Mesnil-sur-Oger 1966? Whatever you choose, this is truly a place to indulge your passion.
The Indigo restaurant has also been renewed and now opens up to the sea. At Indigo, Chef Alexis Voisin has created an exciting and surprising fusion menu of European and Asian flavours. Together with the hip and trendy Blu Bar this is a combined space where you can socialise, enjoy a chilled out vibe by day and a refreshing cocktail at night with the sand beneath your feet.
The new Tom Yum cocktail is inspired by our bar manager Guillaume’s travels in Thailand. Using an inventive dual concept of tradition and modernity – based on the famous, flavoursome Thai soup and using the same name combined with trendy cocktail flourishes – he mixes ginger, lemongrass, coconut, lime and keffir lime to create a strong aromatic cocktail with a bit of chilli and a neutral alcohol base of vodka to enhance the flavours.
Or perhaps you’ll try the club ambiance at new magical Deer Hunter restaurant on the edge of the Legend golf course where Chef Patrick Travady brings an expressive modern take to dishes inspired by his trips to the islands of the Indian Ocean. Its extended deck now brings guests closer to nature than ever before for some incredible views while its interior has been revamped in natural woods to reflect its surroundings.
