Fasten your seatbelt (but not too tight though 😆) the most important culinary festival in Mauritius: Festival Culinaire Bernard Loiseau is back and we can assure you, your palate as well as the rest of your senses won’t stop lusting for a bite of every single dish that our chefs are going to prepare.

Since 2006, we’ve been bringing a tasty one-week culinary festival to the island of Mauritius with the help of Relais Bernard Loiseau and his Chef Patrick Bertron. As the first of its kind, Festival Culinaire Bernard Loiseau has become an anticipated event on the international gastronomic calendar, attracting epicureans, media from around the world, as well as prestigious sponsors.

The goal of the festival is to make possible the exchange of experience, knowledge and savoir-faire of both the Michelin Starred chefs and participating Constance Chefs. They will work together as a team with some imposed products to create a winning dish.

Relais Bernard Loiseau
Opened in 1971 by Michelin star chef Bernard Loiseau, located on an elegant estate in the heart of Burgundy, Relais Bernard Loiseau has built a reputation as one of France’s leading gourmet restaurants. Constance Hotels & Resorts and Relais Bernard Loiseau work together every year to bring together the top-notch talent that we present at the culinary festival.

The Festival
Each competing chef will embody the “Culinary Spirit” of Constance Hotels & Resorts which is defined as: “A fusion of spices and essences, aromas and flavours… Constance Hotels & Resorts reinvents a delicate cuisine, where the culinary traditions of the Indian Ocean islands meet with flavours from Asia, Africa and Europe.”
Sounds fancy, eh?
So, here’s how it works:
Over the week there will be different competitions: The Culinary Competition, Deutz Trophy, Sommelier Contest, Nespresso Café Gourmand, Art of the Table, Pastry Competition and Cocktails Competition;
not-to-miss dinners and cooking classes. All paying tribute to the art of dining, passion for good food and sharing of the warm Mauritian culture. As such, this year the culinary panel introduced the Gateau
Gateau Piment Competition part 1
For the main competition which is the culinary one, there are six passionate Michelin starred Chefs who come to Constance Belle Mare Plage to meet and work with six “Constance Chefs” of Constance Hotels & Resorts from Mauritius, Seychelles and Maldives. They are paired up together and then, the competition is ready to commence!

It’s a tough challenge, but an exciting and mouth-watering one to say the least! Our talents final creations are then put to test by our top-class panel of judges.

Canapé:
Taro vegetarian canape: In brown butter confit of taro with safran, pear, raw palm heart and macadamia nuts.

Main Course Seafood:
Imposed product: OSO organic shrimps from Madagascar:
Crispy cream cheese gnocchi, pineapple, papaya chutney and raw marinated gourd.
Spices: mustard seeds, cumin seeds, coriander seeds, fennel seeds and vanilla.

Main Course Meat:
Imposed product: Iberico pork BBQ
Grilled back of Iberico pork with bell pepper jus, sweet potato cake, red onions and fruit mix guacamole, traditional products for Mauritian bbq in a modern way.
