There are different types of delightful cheeses that all complement various wines; these include:
Hard Cheese – Hard cheeses include Comte or cheddar; these are best suited to a medium-bodied light wine such as Vin Jaune or sauvignon.
Soft Cheese – Soft cheeses examples are brie or camembert. Known for its creamy texture, this type of cheese goes perfectly with a chilled Chardonnay.
Blue Cheese – Not always everyone’s favourite, blue cheeses such as stilton are perfect with a sweet beverage, such as Sweet Sherry.
Goat Cheese – Another creamy dream, this cheese is best suited with a crisp dry rose or sauvignon blanc.

Meet Our Head Sommelier
Meet Sanat Kumar Awadhwal, our chief Sommelier at the beautiful Constance Prince Maurice.
Sanat pursued his dream after working hard and graduating from Uttar Pradesh Technical University, one of the most prestigious technical universities. Sanat graduated with a Bachelor in hotel management and catering technology, specialising in wine.
As quoted by Sanat himself:
“I believe every dinner is an opportunity for the guest to explore a new collaboration of wine and cuisine.”
Sanat considers his job as a hobby, and wine is a passion for him.
Sanat’s Journey At Constance Hotels & Resorts
Sanat’s passion for wine sparked in Mumbai after his graduation. Since then he began his career at Constance Hotels & Resorts as a Commis Sommelier in the Maldives. Sanat experienced all departments of the hotel, from Front Office, Restaurant, Bar, and Sommellerie.
From there, he found the love of his life, Sommelerie. As a Sommelier, he started his career in the Maldives at Constance Moofushi, then moved to Seychelles at Constance Ephelia and Constance Lemuria. The journey with Constance Hotels & Resorts then continued when he moved to Mauritius at Constance Belle Mare Plage.
Through constant support and regular training, Sanat soon progressed up to the role of Head Sommelier at Constance Prince Maurice. He is currently managing one of the most prestigious wine cellars with more than 25,000 bottles and a wine list of 2500 different wine references from all around the world, some being the rarest and prestigious wines.
A Match Made In Heaven: Vin Jaune and Comté
Our pairing of choice from our head Sommelier, Sanat is a heavenly match of Vin Jaune and Comté.
Vin Jaune, also known as yellow wine, is a special type of white wine made in the Jura region of eastern France. This deep, delightful dry wine is made from the Savagnin grape and offers notes of nuttiness. Similar to Sherry, this wine has been matured in a barrel under a film of yeast, known as the voile, on the wine’s surface creating those deep berry flavours.
To complement this wine, our Sommelier has chosen Comté, one of the most famous French cheeses made from unpasteurized cow’s milk in the Franche-Comté of eastern France.
After Sanat visited Fort des Rousse, our sommelier states that the best pairing was a 12-month-old Comté Juraflore which offers complex fruity and nutty flavours with notes of cream and mushrooms; the flavour pleasantly long on the palate.
Both wine and cheese are quite intense and complex which perfectly match which is why this chosen wine and cheese complement each other effortlessly.
Top Tips For Pairing Cheese And Wine
There are a few useful tips before you start your wine journey…
Follow these and have a cheese and wine pairing experience like no other.
The older the better – when it comes to cheese, opt for an aged cheese that is six months or older. These cheeses complement the bold aromas of the wine.
Always pair a soft cheese with chardonnay- The creaminess combined with the crisp, refreshing elements of the wine are a dream.
Don’t pair a strong, full-bodied wine with a mild cheese – the strong deep flavour of the wine will overpower the cheese, instead opt for a stronger cheese to suit the wine.
Enjoy every taste – when you try the cheese and wine together, remember to pause and take in every hint of flavour. There is no rush during your cheese and wine pairing experience; enjoy the moment.
