#ConstanceCulinary 2017: Highlights

What an incredible week it’s been here in Mauritius! Fabulous food, delicious drinks and desserts to die for were all in abundance during our annual gastronomic extravaganza, Festival Culinaire Bernard Loiseau.

Held at Constance Belle Mare Plage and Constance Le Prince Maurice, the special event saw a host of Michelin Star chefs join island chefs from Constance Hotels and Resorts to create culinary masterpieces and compete for the prestigious Festival Culinaire Bernard Loiseau trophy!

Now in its 12th year, the 2017 culinary event was bigger and better than ever before, and saw 11 highly-regarded chefs from 8 different countries grace the beautiful Mauritian shores. In case you missed it, here are some of the highlights from the very special week. Why not join us next year?

The mouth-watering mains

With 14 Michelin stars between them, guest chefs at this year’s event were no strangers to creating exquisite plates of food. The gorgeous dish above was created by the sensational two-starred chef Thierry Drapeau, who is experienced at making dishes that taste as good as they look.

The impossible to resist desserts 

With so many culinary kings and queens at Festival Culinaire Bernard Loiseau, guests were spoilt for choice when it came to the magnificent desserts on offer! Whatever your palate, there was a dessert with your name on it. This delicate dish was created by one of the best pastry chefs in the world, Frédéric Bau. As you can see, it was almost too beautiful to eat (but we managed it…).

To wet the whistle, we also had resident mixologists and sommeliers on hand to prove the art of creating incredible flavours is not restricted to food alone. Guests enjoyed a wine pairing dinner with Delas wines and Chef Marc de Passorio, ensuring just as much attention was paid to the drinks as the food! Passion and flair met coordination during the Cocktails Competition, which saw a whole host of drinks being presented in unique and creative ways. We hope our guests will take home some of the tips shared by the experts and try creating their own drinks inspired by their week in paradise!

The unforgettable scenery

Great food tastes all the better when you’re in a beautiful location. The same can certainly be said for this year’s festival, which was set against the backdrop of our gorgeous 5 star resorts. Guests enjoyed the spectacular beachside scenery while trying new tastes and flavours created by chefs who are inspired by many different cultures. Once fully sated, guests enjoyed volley ball matches, swam in the turquoise sea, and made the most of our facilities including the 18-hole golf course, floodlit tennis courts and luxurious fitness centre.

The tips and tricks

The Festival Culinaire Bernard Loiseau is about more than the chefs competing – it’s about professionals in the food and wine industries sharing their knowledge through many fascinating classes! Attendees enjoyed an Asian-style cooking lesson with Indonesian chef Farah Quinn (pictured above) before learning tips from legendary French pastry chef Mercotte. Esteemed chefs Frédéric Bau and Patrick Bertron also entertained guests with insightful tips and tricks. After all, what better way to remember a perfect week in Mauritius than by recreating the dishes back home?

To end the week, talented chefs Kevin Hook of Constance Belle Mare Plage and William Ledeuil of the Ze Kitchen Galerie (pictured above) won this year’s trophy in recognition of their exquisite flavours and creativity!

We had an incredible time, and hope all our guests came away from Mauritius filled with fantastic memories. We look forward to welcoming you back to Constance Belle Mare Plage for next year’s festival, which will be held between 17 – 25 March 2018 – and hope to see many new faces too!
