One of the most enticing ways to discover a new destination is through its local food. Fusion cuisine is the hallmark of the Indian Ocean culinary scene, taking influences from Africa, Asia and Europe.
At Constance Hotels and Resorts, we source many of our ingredients from independent local suppliers, ensuring the freshest food from market to table. Our chefs have been busily creating new menus so guests can enjoy a full selection of local dishes while on holiday with us.
At Constance Ephélia’s Seselwa restaurant, Seychellois Chef Joel and his team are wowing guests with a new authentic Creole concept. Unique to the island, guests can now enjoy a rich culinary immersion as they try different dishes rich in local spice, fruits and seafood, and prepared using traditional Seychellois techniques.
The sharing menu for two includes chicken coconut curry, giraffe crab, bread fruit fricassee, pumpkin chutney and octopus gratin.
The a la carte features a number of the same dishes along with unexpected delights such as bitter gourd salad, salted fish curry and sweet treats like flamed banana with vanilla ice cream and cassava pudding.
Family friendly and with a big heart, Ephélia hasn’t forgotten how much our youngest guests love to enjoy tasty meals – and our special kids’ creole menu features coco crumb chicken strips, creole rice, fish rougaille with banana crisp.
