Constance Halaveli is inviting guests interested in wine to indulge in an exciting wine menu designed to compare and contrast wines from the New and Old World.

Held at Halaveli’s signature restaurant Jing on 18 September, wines will be paired with sumptuous fine-dining dishes to bring out the very best in both.

Working together with fine wine suppliers Gavin Davis and Bastien Gautheron of MMI Dubai, Jing has selected French and New Zealand wines which best express current trends in winemaking from both regions so that guests are able to make a direct comparison.

The wine menu for guests at Halaveli will include:

  • Saffron Macaroons with smoked salmon, black summer truffle and wild Iranian Caviar
  • Quail and foie gras sausage with horseradish, Madras curry and brioche
  • Caramelised king scallop, soba noodles, beetroot, enoki and dashi
  • Mango sorbet
  • Liberty duck ‘sous vide’, baby pack choy, carrot miso crème and koppert cress
  • Kaffir lime and ivory ganache, passion fruit panacotta and Valrhonna cacao pearls

I am at Vinexpo in Bordeaux with Jorald Julie, Assistant Chief Sommelier at Constance Le Prince Maurice, and Sathia Rau sommelier at Constance Ephélia.

Lucien Le Moine Winery

We had very nice tasting at Lucien Le Moine Winery with Rotem and Mounir Saouma.

They bought two hectares in Chateauneuf du Pape area in 2009 and are showing their wines for the first time: 2009/2010/2011 white and red.

These are spectacular wines…. it’s one of the most exciting tastings.

The white comes from Grenache white and Clairette and they are like a burgundy white.

Barrel fermented, they lie for 2 years, depending on the wines These wines are fresh with a beautiful balance – certainly, one of the top white wines coming from Chateauneuf du Pape.

Red Chateauneuf du Pape. 2009 is their first vintage. The wine is great with Garrigues notes which we find most of the time in Chateauneuf.

The 2010 is wonderful, complex and looks like a vosne romanee but made with Grenache noir.

Top young sommelier of France 2011 – the Duval-Leroy Trophy

Ten candidates hoping to win the award of best young sommelier of France have made it through to the semi-finals of the Duval-Leroy Trophy.

Among the semi-finalists is Yann Hangouet, currently our sommelier at the Constance Belle Mare Plage in Mauritius.

The previous winner of the biennial competition was Jonathan Bauer Monneret. At the time of being awarded the title in 2009, Jonathan was sommelier at Constance Belle Mare Plage in the Blue Penny Café.

Earlier this month, some 100 candidates met across different areas of France to take part in this year’s competition.

Yann Hangouet will be hoping to win the prestigious title when he joins the other semi finalists at Vertus in the Champagne-Ardenne region of France on 27 and 28 November for the finals.
