1.Choose dark greens
Start your salad off right by going for a base of dark leafy greens, such as spinach or romaine leaves. One packed cup will give you more than half of the recommended daily value of vitamin A as well as nearly 100% of your vitamin K. Leafy greens also supply vitamin C, folate and fibre. Lighter greens such as iceberg do not offer nearly the same nutritional value and are mostly made of water.

2. Include colourful veggies
Add one cup of the most colourful, bright fresh vegetables in the salad bar. Raw is best. Aim for carrots, broccoli, beets, ripe tomatoes, and bell peppers – they add more fibre and vitamins compared to pale coloured vegetables like cucumbers or celery. Steer clear of vegetables soaked with mayonnaise or creamy dressings – they add saturated fat and calories to your meal.

3. Choose lean proteins
Chickpeas and kidney beans are one of the best sources of protein on the salad bar. Add one-half cup of beans to your greens for a protein and fibre rich meal. Grilled chicken breast is another option, as is plain tuna (packed in water, not oil). Hard-boiled eggs are an excellent protein option – opt for more white than yolk to cut fat and calories.

4. Mix it up with crunch and zest
Adding walnuts, sesame seeds, or sunflower seeds will give you extra crunch without the added saturated (and possibly trans) fat of croutons and crunchy Asian noodles. Add one heaped tablespoon for a healthy dose of heart-healthy nutrients and fats. For an extra tang, add one tablespoon of grated Parmesan cheese. A little Parmesan goes a long way in flavour as compared to other shredded cheeses, such as cheddar or mozzarella.

5. Extra garnishes
Adding fresh fruit to your salad is a healthy sweet option, but only add about one-half cup because the sugar can still add up. Avoid canned fruits that come in thick syrups like mandarin oranges or peaches and opt for grapes, orange slices, chunks of watermelon or other melon, and fresh berries.

6. Dressing your salad
One of the most crucial ingredients of your salad is the dressing. Avoid creamy mayonnaise-based dressings because they are high in fat and calories. Even low-fat or fat-free salad dressings are loaded with sodium, sugar, and saturated fats. The healthiest option is to dress your salad with a mix of extra-virgin olive oil, balsamic vinegar, and pepper, using only enough to lightly coat your greens. Add a little, toss your salad to ensure even distribution, add a little more, if needed.

Former captain of France and player for Arsenal Robert Pirès knows a thing or two about what it takes to be the best, and that is exactly what he is looking for in a holiday.

‘For me luxury is a hotel like Prince Maurice where I can do nothing and relax 100% knowing that the attentive staff will look after everything.’

So how does the man who captained the French International team to its win in the 1998 World Cup and Euro 2000, and enjoyed two Premier League wins during his time with Arsenal choose to spend his holiday?

‘I do nothing but relax and enjoy the service. Time stops for us when we are at this place – we simply chill out and enjoy the beautiful weather. I spend most of my time at the beach or at the pool.’

How Pirès discovered Le Prince

Pirès, now a sports commentator and broadcaster, discovered Constance Le Prince Maurice through his partner Jessica Lemarie who had done a modelling shoot at the resort years earlier.

‘She had always spoken about this hotel and wanted us to come for holidays but at the time, both of us being very busy in our professions, we never made it. Once we settled with a family we finally decided to come. As soon as we arrived we fell in love with the hotel and now we are on our third visit in one year.’

Asked to describe what it is about the resort which keeps drawing him and his family back, Pirès explains, ‘Mauritius is well known for the kindness of its people and we feel it as we arrive at the hotel with the staff being very friendly with a natural warmth. The welcome here is exceptional and the staff charmant.’

The footballer and father says he loves the fact that at Le Prince Maurice he can relax knowing his kids are having fun and are being well taken care of. ‘My children have just as great a time here as I do, they enjoy Les Petits Princes kids club and my babysitter looks after Alessio (the baby) as if it was her own child. My children being in such good hands helps us to relax.’

Pirès describes that he likes to spend the summer in Europe and to visit St Barthelemy in the Caribbean but says, ‘In the winter time we fly to Mauritius, Le Prince Maurice, of course. Our fourth visit to the hotel won’t be far away.’

The high-end paradise resort of Constance Le Prince Maurice created the stunning backdrop for the wedding of David and Carina Billam.

David, an officer with the British Royal Navy, and his wife Carina were our second guests to check-in following the refurbishment at the resort.

When David and Carina started researching resorts for their forthcoming marriage they knew they wanted somewhere that exuded a discreet elegance and luxury.

What made us choose Le Prince Maurice
‘We chose Le Prince Maurice due to its understated luxury. From trawling the internet it appeared to be a discreet, luxurious and romantic location. The wedding package provided everything we needed as well as allowing for extras that we both wanted at a reasonable price.

In addition recommendations from travel agents were nothing but outstanding, it was sold to us as one of the top hotels in Mauritius – which it quite obviously is.’

On arriving at the resort the couple were struck by the warm welcome they received. ‘The lobby was incredibly impressive and we were instantly greeted by both the General Manager and the General Resort Manager, both of whom were so welcoming it gave us the impression that we were being welcomed by a long lost family.’

The staff made all the difference
The couple were delighted with the beauty of the resort but reserve their strongest praise for the staff who made their stay so enjoyable.

‘The hotel was truly reflected by the photos we viewed online, although in reality it’s far more beautiful. The location and scenery are amazing and certainly put a smile on your face each day but what keeps that smile there is everyone who works here. It feels like people are kind from the bottom of their hearts and it doesn’t make you feel that people are being wonderful purely because they are paid to be.’

The Billams were offered the opportunity to upgrade to a villa at Constance Belle Mare Plage, ‘Carina and I said no, purely for the fact that we would have missed the people at Le Prince Maurice.’

Quality in every sense
When the couple were at home dreaming about their wedding and honeymoon they imagined the luxury of ‘being able to enjoy each other’s company with no consideration for home and the stresses that work brings.’ And that is exactly what they found at Le Prince Maurice.

‘Every morning we woke up to the most incredible breakfast buffet. If the weather was promising we’d head to the beach and spend the hours tanning up and relaxing in the sun. In the evening we’d enjoy the incredible selection of food on offer – our personal favourite is the Asian tapas cooked by Li Junwei. On other days we visited the market in Flacq, the capital Port Louis and took a day trip to Ile Aux Cerfs.’

What they hoped for from their idyllic wedding location was a world of elegant luxury, ‘quality in every sense,’ which, as they describe, ‘is exactly what is delivered at Constance Le Prince Maurice.’

“Five of us visited this hotel in Dec 2010 for just over a week on a half board basis. The food was excellent, the rooms were of high quality, and we made use of the facilities like sailing and scuba diving – The sole criticism is around the electronic door lock that caused some access problems over a 2 day period. I would unreservedly recommend this hotel to anyone looking for a relaxing beach holiday. .”
