Florian says:

1. Match the rosy glow of the sun sinking into the Indian Ocean and put a touch of sparkle into your sunset aperitif with a delicate glass of Champagne Deutz Brut Rosé.

2. Refresh your palate after a long luxurious day in the sun with the surprising Sequillo White 2011 from Eben Sadie in Swartland, the most dynamic region of South Africa. This is a wine full of flavours but always sharp.

3. Match the warm, spicy flavours of Maldivian cuisine with the elegant fruitiness of an amazing Condrieu “Terrasses de l’Empire” 2008 du domaine Georges Vernay from the Rhone Valley in France.

Nicolas Rossignol and a representative of the Gonet-Médeville vineyard will join guests at Ephelia on the 25-27 December to introduce them to some of their famous wines and champagnes. A menu has been specifically designed to compliment the famous French wines and to create a dining event not to be missed.

From a family of winemakers Nicolas Rossignol established his own estate back in 1997 in the region of Volnay using ancient winemaking techniques.

Gonet-Médeville has also stayed true to traditional growing methods in the creation of its grand cru and premier cru champagne.

Come and taste the best of the wines they have to offer at Ephélia this Christmas.

These wines combined with our Chef’s selection of cheeses and cold cuts in Jing and Jahaz wine cellars is a must-do experience at Halaveli.

Wines from Swartland region

Cedric, and Constance corporate sommelier Jerome Fauré, discovered new wines at an exhibition of the latest up and coming South African vintages in Cape Town.

Cedric’s other top recommendations from the Cape Wine 2012 event are:

South Africa, wine region

South Africa, wine region

He was most impressed by wines from the Swartland region. The wines from the region Swartland really stood out because of the hard work that goes into making the wine. Wine makers from this region seek to produce wines that reflect the South African Terroir starting by analyzing the soils and subsoil, the climate or even micro climate, and identify which grapes will be the most suitable for the place they are.
