When Guillaume Grafeuille, head bartender at Constance Belle Mare Plage in Mauritius adapted a classical recipe and gave it a tropical twist, he didn’t imagine that his creation would soon be featured in all our resorts around the Indian Ocean!

Our managing director tried it one evening and found it so interesting, that he decided to put it on every bar list. The suave and sweet notes of the vanilla syrup balance the sharpness of the fresh passion fruit pulp.

Serve shaken, not stirred.


4cl Vodka Absolut vanilla
2cl Passion fruit liquor
2cl Vanilla liquor      
5cl passion fruit purée
½ passion fruit

1 shaker
1 martini glass (16-18cl)
1 strainer 

  1. Add the ingredients to the shaker.
  2. Add ice to the shaker.
  3. Shake well.
  4. Pour the cocktail through the strainer into a martini glass, and garnish with half a passion fruit.
