Sunday 3 March

Our sommeliers at Constance Ephelia enjoyed training with Anne and Olivier Decelle, owners of St Emilion Grand Cru Chateau Jean Faure. We tried the 2009 and 2010. It is a special blend with 50% Cabernet Franc, 40% Merlot and 10% malbec. The property is close to St Emilion Premier Grand Cru Cheval Blanc.

The 2010 is for me a really wonderful wine – one of the top from St Emilion.

Anne and Olivier Decelle also own Domaine Mas Amiel, located in Roussillon nearPyrenees. They are making Maury (Fortified Wine) Maury Sec (new appellation in 2011 – only Red ) and some Cotes du Roussillon Villages (White, Red and Rosé).

On Sunday evening we enjoyed a wine tasting with all the wine makers and our guests at Constance Ephelia.

Cotes du Roussillon Villages Altair 2010 Mas Amiel with Red Snapper Wheel’s Carpaccio with Green Bean Salad and local Passion Fruit Dressing

Maury – Mas Amiel 1969 with marinated Red Tuna Rose, Grilled Zucchini with Light Curry Apple Compote and Tomato with Xeres Vinegar.

Main Course:

St Emilion Grand Cru Chateau Jean Faure 2010 with Lamb Fillet with CrispyParmaHam, Local Eggplant Chutney, Parmesan Tuile and Pan Forte Sauce.

Dessert:

Maury Charles Dupuy, Mas Amiel 2008 with Surprise Dark Chocolate Sphere with Berries Compote.

Monday 4 March:

We held staff training about Rhone Valley Wine with Christine Vernay (Domaine George Vernay) who is owner and wine maker for prestigious appellation from North of Rhone Valley (Cote Rotie – Condrieu) and Thomas Perrin, one of the owners of Chateau de Beaucastel in Chateauneuf du Pape.

Ephélia and Lémuria celebrate the art of French winemaking

We have invited some of the most inspirational French winemakers from the Art de Vignes association to visit the Seychelles to share their passion and produce with our guests.

Run in connection with a series of dining events, guests will be able to sample wines from:

The guest winemakers will work in conjunction with the sommeliers and chefs at the restaurants of Ephélia from 3 – 6 March.

At Lémuria guests can enjoy the opportunity to meet and talk with the winemakers before enjoying a wine dinner and golf competition running from the 8 – 9 March.

1. Anse Georgette 

We’re not just picking Anse Georgette because it happens to be the beach that our exclusive Lémuria hotel is nestled on. It was also voted number 1 beach destination by Trip Advisor this year, along with the island of Praslin where it’s located. The beautiful seclusion of this beach, a perfect white-sand cove sheltered by rocks teeming with sealife, make it one of those special places that will linger in your memory for years to come. A short boat-ride from Praslin is the stunning, tranquil island of La Digue where beautiful beaches are everywhere you turn. 3. Port Launay

One of the most beautiful beaches on the island of Mahé, Port Launay is situated on the north-west side of the island ensuring calm, tranquil waters perfect for swimming. Constance Ephelia looks out across Port Launay Marine Reserve.

4. Anse Beau Vallon
Set in the north-west of Mahé Beau Vallon has stunning views across crystal waters to Silhouette and North Island. It is a perfect example of what you would expect from a Seychelles’ beach. A seemingly endless stunning white-sand beach offering you the chance to find your own secluded spot away from local restaurants and bars.

5. Anse Major
Accessible only by foot or boat this beautifully secluded beach on the island of Mahé is a haven of white sand and calm turquoise waters. Sheltered by granite it offers privacy and tranquillity as well as some amazing snorkelling opportunities.

Family fun in the Seychelles this Easter

4. Diving

As the waters calm after the rainy season divers can fully appreciate the vivid, colourful spectacle of the numerous dive sites around Lémuria and Ephélia. Water temperatures average around 29ºC at this time of year and visibility is often 30 meters or more. If you’re looking for something a bit different, try a thrilling night dive.

5. Fishing
Feel the rush of excitement and adrenalin of pursuing one of the great game fish through the crystal waters of the Seychelles. The deep-sea fishing season starts in April and runs through to October. Pit your wits and your strength against giants of the sea including tuna, barracuda, wahoo, sailfish and marlin.

The Sunday Times recommends Constance Ephélia as the perfect spot for Easter with the family this week.
