The eight water villas are perched along the edge of a natural fish reserve, offering tranquility and beautiful views across the lagoon. They each have private balconies, and are situated to the western edge of the resort offering fabulous views of the sunset.

All the villas and suites at Le Prince Maurice are exquisitely decorated with dark wood polished floors, seductive lighting, and beautiful green and purple fabrics. The bedrooms have been feng shui’d, and come with some of the comfiest beds you’ll ever sleep in.

We know how important a good night’s sleep is for our guests.

At Constance Le Prince Maurice, our beds are some of the most comfortable you’ll ever sleep in.

To give you extra comfort, we offer guests a choice of pillows from our special pillow menu.

Upon arrival, you’ll find 2 goosedown and 2 feather pillows on your bed. If you prefer a different type of pillow, you can choose from the following list:

  • feather pillow extra large – a cuddle pillow, extra large, 1250gms. 20% goosedown and 80% feather, this pillow is firm yet soft enough for that luxurious feeling
  • synthetic pillow – designed to be hypoallergenic, medium to firm support, 750gms
  • eco pillow – a contoured foam pillow ideal for neck and shoulder support
  • bolster – a French-style body pillow, hypo-allergenic, that provides support for legs and ankles
  • tempur pillows – ideal for those looking for a therapeutic pillow that softens and moulds to the body, gently cradling your head and neck. Choose from original extra large, medium or soft.

Guests simply need to call our reception, and they’ll arrange for your preferred pillow to be brought to your room.

Recipe: Curry flavoured peanut and cashew bread rolls

Home-baked bread is far tastier than anything you can buy in the supermarket. Try these Mauritian nutty bread rolls – they’re easy to make, and best eaten warm.

Serves 8
Preparation time: 20 minutes
Cooking time: 20 minutes
Resting time: 30 minutes

Ingredients

  • 500g flour + 50g for dusting
  • 10g baker’s yeast
  • 75g mild curry powder
  • 10g salt
  • 50g peanuts
  • 50g cashews
  • 1/4 tsp powdered red chilli

1. In a large bowl, mix the flour, yeast, 30cl water and the curry powder.
2. Knead by hand for 15 minutes. Add salt, peanuts and cashews then knead for 5 more minutes.
3. Shape this dough into balls, about 50g each. Place them on a baking sheet lined with parchment paper. Let the dough rise at room temperature for 30 minutes.
4. Preheat oven to 220ºC. Place a bowl of water in the oven.
5. Lightly dust the rolls with sifted flour and red chilli powder. Using a sharp blade, make 3 slits on 3 sides of each roll. Bake for 20 minutes until golden brown.

Conny Jones, who lives in the UK, is the lucky winner of our 5* holiday of a lifetime to Constance Le Prince Maurice in Mauritius.

She’ll be heading out to Mauritius with her husband of 30 years, Alan. Find out what winning the holiday means to Conny and Alan.

Q: How do you feel about winning the competition?
A: I was absolutely stunned and over the moon. I’d just got home from work. I work long days as a ward sister and I usually check my emails when I get home to unwind. I nearly didn’t open the email because I thought it was nothing. I had to read it five times. Then I just screamed. My son said ‘what’s up’, and my husband was saying ‘no, it’s a timeshare’. We all looked at it again and again and said, ‘it’s real’. We couldn’t believe it.

Q: What does it mean to you to be going to Mauritius for your 30th wedding anniversary?
A: It’ll be amazing. We’ve just had our 30th anniversary. We’d wanted to go to Rome for a week but both our children are doing exams, AS and A levels. They’re 17 and 18 years old. So we went to North Devon for the weekend instead but it rained all the time so we thought we would have to do something else. Then this came along.

Q: What are your hopes and expectations of Le Prince Maurice?
A: I’ve been looking at the little video of the hotel on the website, trying to imagine what it’s going to be like. I’m really looking forward to the feeling of being pampered. To feel rich and looked after. I think it’s just going to be amazing. All our holidays have been done on the cheap before. The sheer luxury, food, scenery, watersports… it will be amazing.

Q: How does your husband feel about the holiday?
A: My husband finally believes it. He’s really looking forward to it. At Christmas he works really hard in the Christmas tree trade, and in January he usually gets a bit depressed. Christmas will be easier this year knowing that we’ve got the holiday coming. Our children are teenagers and don’t really like sunshine holidays. They did ask ‘is it for 4 people’ but we said, no, it’s just for 2!

Q: Do you often enter competitions, and win!
A: For the last couple of years I’ve entered competitions but I got fed up with it and stopped altogether. It was only a couple of months ago that I started again, and now I only enter ones that I really want. I’ve won small things before like cosmetics. We won a family weekend in London once with tickets to the theatre. But I saw this competition on the Loquax competition site and thought it looked good. I’m still amazed I’ve won.

Recipe: Pineapple and watermelon sandwich with cinnamon French toast

Liven up breakfast time with this easy and tasty recipe from Constance Le Prince Maurice in the Indian Ocean.

Pineapple and watermelon sandwich with cinnamon French toast

Serves 4
Preparation time: 1 hour
Cooking time: 5 minutes

Ingredients:
2 medium sized pineapples
1kg watermelon
12 basil leaves

For the cinnamon French toast:
4 slices white bread
2 eggs
40g sugar
1 pinch cinnamon powder
25cl whole milk
80g butter

For the citrus jus
1 orange
1 grapefruit
20g sugar

1. Peel the pineapple and watermelon. Cut each fruit lengthwise into 8 5mm thick slices. Lay these on top of each other in the following order:

  • 1 slice of pineapple
  • 1 basil leaf
  • 1 slice of watermelon

Repeat this twice until you have a 3 tiers in your sandwich. Make 4 other fruit sandwiches in the same way. Trim each one into a neat square and then cut each square into 2 triangles so you have 8 triangular sandwiches. Secure each triangle by using a small wooden skewer into it.

2. Make the citrus jus: halve each citrus fruit, squeeze them and mix their juice with the sugar. Boil down by half, and set aside.

3. Make the cinnamon French toast: break the eggs into a bowl, whisk in the sugar, cinnamon and milk.

4. On a low heat, melt a little butter in a large frying pan. Dip the bread slices into the egg batter, lay them into the pan and fry them gently until lightly golden.

5. On each plate, put 1 slice of French toast and 2 triangular sandwiches. Sprinkle with citrus jus and serve while the French toast is warm.
