Kanonkop Wine Dinner at Constance Halaveli

Winemaker Johan Krige, from the famous South African winery Kanonkop Estate, is hosting a special wine dinner at Jing restaurant, Constance Halaveli, this Sunday 21 October.

The menu has been created by our Head Sommelier at Halaveli, Cédric Jacob, and his team together with Executive Chef, Glen Cooper.

At the dinner, with each course we’ll be serving 2 bottles of the same wine but from a different vintage, so guests can learn about the impact of the ageing on the wine.

Here’s the delicious menu we’ll be serving:

To begin

  • Prawn in 3 Textures
  • Pickled ginger mayo & sherry vinaigrette
  • Wine – Kanonkop, ‘Kadette’, Rosé, 2010

Fork & spoon

  • Cinnamon & anise spiced breast of Duck
  • Red fruit gelée & consommé of duck
  • Wine – Kanonkop, ‘Paul Sauer’, 2009

Main course

  • Carnival peppered Wagyu beef tenderloin
  • Shitake ravioli & horseradish emulsion

Dessert

  • Warm Jivara Fondant

Sourcing the best wines from South Africa for Constance hotels

Our Head Sommelier, Jerome Fauré has been busy this month visiting the Cape Wine event in South Africa, sourcing some of the finest wines to bring back to Constance hotels for you to enjoy.

Cape Wine is a huge event, with around 450 South African wine makers showcasing their wines.

Accompanying Jerome were Cedric Jacob, Head Sommelier at Constance Halaveli, Sanath Kumar, Sommelier at Constance Moofushi, and Fleur Edel, Head Sommelier at Constance Ephelia.

The team spent 3 days tasting some 600 different wines.

They then travelled to the Swartland region and met with wine makers including Eben Sadie, Andrea & Chris Mullineux, before heading to the Walker bay region, home to Hamilton Russell, Ataraxia, La vierge Winery, Cartology….

Guests visiting our hotels in the Indian Ocean are in for a treat. Jerome said, “After this trip, I can tell you that many South African wines are starting to get better and better, and we have found some really amazing wines.”

Chilled mango soup with ginger ice cream

Deliciously summery, the mango and ginger work perfectly in this recipe from the kitchens at Constance Halaveli.

Chilled mango soup

For chilled mango soup

  • Mango 4kg
  • Sugar syrup  (30% sugar 70% water) 75ml

For ginger ice cream

  • Single cream 125ml
  • Milk 250ml
  • Caster sugar 100g
  • Tremoline 75g
  • Fresh ginger, cut into very small pieces 50g

Mango soup

1. Peel the mangoes, cut into cubes and blend. Then mix with the syrup.
2. Keep refrigerated.

Ginger ice cream

1. Heat the fresh cream, milk, sugar, ginger and Tremoline.
2. Strain, and let it cool.
3. Then blend and freeze.

Gewurztraminer Frontholz Sgn (France) Fresh and floral, this wine has a harmonious and balanced personality, with aromas of candied citrus peel, mango, apricot, rose petal and smoked tea. This wine is soft and seductive.
