Bruno’s passion for his work stems from his great love of food, and his career has taken him around the globe.

Having first joined Constance Hotels & Resorts as Executive Chef in 2002, Bruno went on to be Corporate Chef of the group before becoming Resident Manager of Constance Belle Mare Plage in 2012.

Bruno was the first person in Mauritius to become a member of the Maîtres Cuisiniers de France, and was the mastermind and co-founder of the Bernard Loiseau Culinary Festival.

At Lémuria, Bruno will lead the team of this ultimate 5* hotel, set on the island of Praslin adjacent to pristine beaches, and with its own 18-hole championship golf course.

During the food festival, six top European Michelin-star chef’s come to work alongside six of our best island chefs. The festival culminates in a cook-off competition for the best Euro-island inspired menu.

During the festival the world renowned chefs and judges will be offering special menus and cooking demonstrations to guests at both Belle Mare Plage and Le Prince Maurice.

Culinary Festival Bernard Loiseau returns to Mauritius

Excitement is building around the 2013 Culinary Festival Bernard Loiseau at Constance Belle Mare Plage, Mauritius. For guests this is a rare opportunity to sample food prepared by some of the world’s leading chefs all together in one stunning location.

Top chefs, including three Michelin star-holder Patrick Berton and two Michelin-starred Eyvind Hellstrom, are lined up to judge the nail-biting culinary competition which runs from 18-26 March 2013.

A selection of six of Europe’s finest chefs will visit Mauritius to cook alongside six of our island chefs with the challenge of creating an award-winning menu from local produce.

Guests at both Belle Mare Plage and Le Prince Maurice can get involved throughout the week with cooking demonstrations, special menus created by the visiting chefs and the thrilling prize-giving ceremony.

  • Special dinner at Le Prince Maurice on 18 March orchestrated by Chef Hellstrom
  • Special dinner at Belle Mare Plage on 20 March created by Chef Bertron
  • Morning cooking demonstration by Chef Bertron at Belle Mare Plage’s Citronnelle restaurant on 22 March
  • Gala dinner by the Constance chefs at the Deer Hunter restaurant, Belle Mare Plage on 23 March

The week will climax with a cook-off on the final day in which the island chefs will need to put into practice all they have learned from their Michelin-starred mentors to create the winning menu.

Bertron, a former protégé of chef Bernard Loiseau after whom the festival is named, has described the competition as being, ‘In the spirit of Loiseau’s legacy, it’s about sharing, it’s about training and it’s about transmission.’

  • Deer Hunter – a celebration of Mauritian cuisine. Chef Rajesh Payanandee uses traditional recipes and cooking techniques to create a taste of Mauritius for his guests.
  • Blue Penny Café – the epitome of fine dining, head chef Frederic Goisset sets the culinary standard extremely high with his creation of elegant dishes, beautifully presented. He also frequently opens his kitchens to Michelin-star chef’s from around the world.

In March every year Belle Mare Plage attracts foodies from around the globe to the famous Bernard Loiseau Culinary Festival. Six European Michelin-starred chefs compete in teams alongside Constance chefs to create award-winning dishes using only local produce.
Our chefs are given the opportunity to work alongside these European masters, watching and learning from the best of the best. In return the European chefs return to Europe with a hint of Mauritian spice they’ve learnt from us.

This morning the 6 teams were drawn. Communication is flowing well among the different chefs, and the ambiance is great. They went to Port Louis market to discover the products of Mauritius and came back with plenty of ideas.

Tonight at dinner time, we had booked 6 tables (one for each team) for the team mates to get to know each other better and break the ice. I had the great pleasure to witness that they all chose to make a long table and share the dinner all together instead. This is the true spirit of the festival… It makes my day!

Christopher Barber is one of the judges on this year’s panel. Christopher has over 30 years of experience in the food and restaurant industry, and has carried out nearly every role you can imagine.

Here, he reveals the thrills of the first day of the festival, as the fun begins and everyone gets to know each other.

What a way to launch a festival – Creole street market food followed by music and dancing.

It was really special. Relaxed, fun… a great ice breaker. And talking of ice, star of the day was a singing traditional Mauritian ice lolly maker – simply unique and wonderful.

No sign of the chefs competitive instincts yet, but that’s all to come.
