Recipe: Carrot soup with cumin seeds and orange juice rocket leaves

Continuing our series of recipes from the luxury Constance kitchens, this week we’re sharing our carrot soup with cumin seeds and reduced orange juice rocket leaves.

Carrot soup with cumin seeds and reduced orange juice rocket leaves

Serves 4
Preparation time: 40 minutes
Cooking time: 50 minutes

Ingredients:

  • 300g carrots
  • 1 onion
  • 1 leek
  • 3 sticks of celery
  • 100g potatoes
  • 2 cloves garlic
  • 1 tsp finely chopped ginger
  • 1/2 tsp cumin seeds
  • 500ml chicken stock
  • 3 sprigs thyme
  • 1 bay leaf
  • 20g butter
  • 100ml crème fraîche
  • salt

For the juice:

  • 300ml orange juice
  • 1/2 tsp cumin seeds
  • 20g butter
  • a few rocket leaves
  • 1 tbsp olive oil

1. Peel the carrots, onion, garlic and potatoes. Slice carrots and onion separately. Finely dice the leek, celery and potatoes. Finely chop the garlic.
2. Sweat the onion, garlic, ginger, leek, carrots, cumin seeds and celery for 10 minutes in butter, without colouring. Add chicken stock, thyme, bay leaf and salt. Bring to the boil, add the potatoes and simmer on low heat for 30 minutes.
3. Add the crème fraîche, blend and sieve the soup. Check for seasoning.
4. Heat the orange juice until it is reduced by one third and syrupy.
5. Toast the cumin seeds in the oven at 180ºC for 5 minutes.
6. Add the reduced orange juice to the soup. Using a hand blender, blend the soup with the butter.
7. Divide the soup into 4 bowls, decorate with the rocket leaves, add a streak of olive oil and sprinkle with cumin seeds.

Top young sommelier of France 2011 – the Duval-Leroy Trophy

Ten candidates hoping to win the award of best young sommelier of France have made it through to the semi-finals of the Duval-Leroy Trophy.

Among the semi-finalists is Yann Hangouet, currently our sommelier at the Constance Belle Mare Plage in Mauritius.

The previous winner of the biennial competition was Jonathan Bauer Monneret. At the time of being awarded the title in 2009, Jonathan was sommelier at Constance Belle Mare Plage in the Blue Penny Café.

Earlier this month, some 100 candidates met across different areas of France to take part in this year’s competition.

Yann Hangouet will be hoping to win the prestigious title when he joins the other semi finalists at Vertus in the Champagne-Ardenne region of France on 27 and 28 November for the finals.

“The Halaveli water villas are perfect – lovely calm rooms, with their own plunge pool overlooking the sea – we never felt the need to leave during the day as we had everything we needed – comfy sun beds, beautiful views and our own pool to cool off in.

We ate in the Jahaz restaurant, and the food was sensational – every night the buffet was a different theme, and the quality was outstanding – you could have as much or as little as you like, and enjoy the atmosphere.

The staff were great – from arrival at Male Airportyou were whisked away to the Constancelounge, then onto the seaplane, and greeted at the Halaveli by the staff on the jetty – then whisked off to your room. And the same on departure – even to the extent of checking you in at the airport -wonderful service, and things like that really add to the experience. Everywhere you went you were greeted with a smile and nothing was too much trouble for anyone. Whoever you met had time for a chat and we felt that we were surrounded by friends wherever we went.

I could go on for ever – but to sum Halaveli up, it is just wonderful. Go and enjoy – it will exceed all expectations – and then some!!”
