Renowned Chef Jordi Villa is at the helm of the new Kaika Sushi Bar that’s just opened at Constance Halaveli in the Maldives.
The new space – Kaika Sushi – overlooks the magnificent turquoise lagoon at Halaveli offering exceptional views while guests watch the dishes being prepared in front of them.
The main menu consists of traditional Sushi, Sashimi and Maki delicacies but it’s the two menus that have been put together by Chef Jordi that demand particular attention.
The Tsukiji menu is made up of 5 dishes including highest quality ingredients such as Wagyu beef, Yuzu and oysters. ‘The Joy of the Sea’ features scallops, saku tuna, yellow tail sashimi, followed by ‘The Wealth of the Sea’ a delectable blend of sea urchin, ikura, salmon and shrimps gunkan.
The Creation menu – again created by Chef Jordi – is more adventurous while still respecting the Japanese culinary art and traditions. ‘Kombu Chawanmushi’ includes shiitake, spring onion and sea urchin, Octopus Sashimi features puff rice, black garlic kewpie mayonnaise and the Balinese style Yellow fin tuna is served with soft shell crab, sweet sour vegetables and mango salsa.
