We caught up with our Demi Chef de Partie, Elvina Rateau, to find out what goes into making breakfast such a memorable moment for guests at Constance Le Prince Maurice.
What do you enjoy most about your role?
Breakfast is the most important meal of the day, fuelling our bodies for the day ahead. In my role, I’m responsible for overseeing breakfast for our guests – being boss for the morning makes me feel like I’m the Executive Chef!
How do you feel Constance goes that extra mile perhaps other hotels do not?
Without a doubt, we give top notch service, that is our strength across all our hotels. I feel Constance invests a lot in its employees so that we are able to achieve this mission.
How do you help new guests feel at ease when they arrive?
We want all our guests to feel comfortable when they arrive at the hotel. Many of our guests return time and again, and talk about feeling like they belong to the Constance family. Our warm and friendly approach helps our guests to feel relaxed and at ease. That’s really important, so they feel at home and able to enjoy their holiday from the first moments they are with us.

How do you enjoy your time outside your role?
Outside work I enjoy spending precious time with my family and sharing with them my daily adventures and tales from the Prince Maurice.
