Legend Golf Course, Mauritius

The 50-year-old Englishman played a storming last round at the Royal Porthcawl Golf Club to finish five under par and collect the £37,500 prize money, beating home favourite Ian Woosman.

Winner of the Mauritius Open back in 1996, Golding returned to the island last year when he qualified to compete in the MCB Tour Championship, held at Constance Belle Mare Plage, for the first time.

On his current form we look forward to welcoming him back to Mauritius for the MCB Championship again this December.

Mangoes

This simple and delicious recipe was dreamt up by the pastry chef as he looked up at the trees.

Ingredients

The mango:

• 1kg mangoes

The mango coulis:

• 200g mango puree (made with the ripest)
• 25ml Malibu

1. Peel the mangoes and cut them into large cubes. If you like you can mix them with seasonal fruits.
2. Pour the mango puree into a bowl and add the Malibu. Dilute it if necessary with fresh coconut water until you get the desired consistency.
3. Pass it through a sieve (mango coulis should be smooth) and store it to cool.

The ginger ice cream:

• 125ml liquid cream
• 250ml milk
• 100g sugar
• 75g honey
• 50g ginger

1. Mix all the ingredients in a bowl
2. Sieve everything through a cheesecloth strainer and pour the contents into the ice cream maker.
3. Blend it until it reaches the desired consistency.
4. Make some little biscuits or cat’s tails as an accompaniment

Finishing and presentation

Place the mango cubes on the bottom of a plate, bowl or cup. Pour the mango coulis over them.

Finish it off with a dollop of ginger ice cream and some cat’s tails biscuits.

I have never been back to the same hotel in my years of travelling this fantastic globe, and wondered if I had made a mistake in choosing to return to Le Prince Maurice. I need not have worried. The hotel was even more luxurious after its refurbishment, and the service… well, what can I say.

Greeted by name by every member of staff… the General Manager introduced himself again over dinner, the Spa manager came over at breakfast to ask how my massage had been the previous day, the receptionist greeted me as a long-lost friend and the guest relation’s manager up-graded me and treated me like royalty.

Sea plane landing at Moofushi

1. Before flying, use compression socks. They may not look sexy but they’re effective and will go unnoticed.

2. When you’re on the plane, avoid crossing your legs as it restricts your circulation.

3. During the flight, get up and move around. Taking just a few steps can help to revive your blood circulation.

4. Rub your ankles and then rotate them, first one way and then the other.

5. Massage your feet with a tennis ball that you roll under each foot – you’ll feel the benefits immediately.

Finally, once you’ve arrived at your hotel, head to the spa. At Le Prince Maurice, you can enjoy a cold shower on your legs, regenerate yourself with a sandalwood and cane sugar scrub, then follow it up with a 45 minute reflexology session. It will leave your legs feeling light and refreshed.

On a recent visit to the resort the magazine describes the Seychelles as an idyllic holiday destination and Ephélia as the perfect place to stay.

5 star luxury in Seychelles

‘We stayed at the breathtakingly beautiful 5 star Constance Ephélia Resort on the island of Mahé. Here we enjoyed swimming in our private pool at our private villa where all you can hear are birds singing, the rustling of leaves in the coconut palms and small waves washing onto the North Beach just a few steps away.’

The magazine team was amazed by the number of activities on offer at the resort and tried their hands at everything from rock climbing and zip lining to trail hiking and spa treatments. They even took time out to feed the resort’s 110-year-old tortoise, Dusty.

Other highlights outlined by the magazine were the tantalising, 5 star food served at the resort’s five restaurants and the friendliness of all the hotel staff. ‘The staff are like a family at Constance Ephélia Resort, even though there are 800 of them!’

We select the very best produce daily from the local market on Nosy Bé including the freshest spices, fruits and vegetables – luscious pineapples, mangoes and lime, plump pumpkins and vibrantly coloured sweet potatoes.

The fish our chefs prepare is caught off our shores by fishermen from the neighbouring island of Mitsio. Fishing with nets off traditional wooden pirogues, they use the same techniques that Malagasy fishermen have used for hundreds of years.

It is even possible to have your own pirogue fishing experience with our chefs on hand back on dry land to prepare and cook your very own catch-of-the-day.

Links golf course, Constance Belle Mare Plage, Mauritius

Held at Mottram Hall in Cheshire last week, Wesslingh produced a stunning 20 under par total, including a flawless final round, to hold off all challengers and take the ISPS Championship.

The win sees Wesselingh climb to the top of the Senior Tour Order of Merit putting him in a strong position to make it to the MCB Tour Championship held at Constance Belle Mare Plage, Mauritius in December.

Wesselingh was reported as saying, ‘It’s unbelievable, I just can’t believe I’ve done it. Couldn’t believe I’d done it last year and I can’t believe I’ve done it again this year.’

Challenging Wesselingh for the top spot was Paraguay’s Angel Franco coming in second with 16 under par and fellow Englishman Ian Woosnam who came in third.
