Domaine de la Citadelle to visit Constance Ephélia

Constance Ephélia has invited winemakers from the prestigious French Domaine de la Citadelle to create a perfectly paired wine menu for guests on 10 February at Cyann Restaurant.

Domaine De la Citadelle was created in 1989 from the passion of Yves Rousset-Rouard to produce a grand vin that fully reflected the Côtes du Luberon region.

Embracing the region’s traditions, variety of soil types (clay-limestone, clay-sandstone, stony and marl), aspect and climate, Yves and his son Alexis have been able to create one of the top domaines in the region.

Having planted 14 different grape varieties (Syrah and Grenache forming the majority), they have worked in traditional ways in order to maintain the balance between caring for the vines and the environment.

Each year the yield is carefully limited with a removal of a percentage of buds in spring and a ‘green harvest’ in July to ensure the grapes which remain are the very healthiest and sweetest. These are then picked, by hand, at the perfect moment to ensure optimum maturity.

Guests at Constance Ephélia will be able to enjoy a range of wines from Domaine de la Citadelle, alongside a menu created by our world-class chef to bring out the best in each wine, on 10 February.
