Teresa Levonian Cole started her exploration of Madagascar with a stay at Tsarabanjina where she experienced the rich biodiversity of the tiny island resort.

During her stay Teresa tried her hand at deep-sea fishing (landing a sailfish which was then prepared and cooked for her by the hotel chefs), snorkelling and bird watching around the stunning basalt rocks of the Four Brothers diving site.

Teresa describes, ‘I was at Tsarabanjina, a private, barefoot island resort of just 25 beachfront wooden bungalows… Tsarabanjina, with its forested volcanic slopes, ringed by white sands and turquoise waters that teem with fish edible and decorative, is a paradise indeed.’

While an idyllic location tops many a wish list, it’s the quality of personal service that can really make or break a holiday.

So when our youngest guests leave a beloved cuddly friend behind we make it our mission at Constance to reunite these teddies, bunnies or blankets with the children who love them as quickly as possible.

When Carlotta left her ‘blankie’ at Constance Halaveli her mum sent us an email to tell us her daughter couldn’t get to sleep without her much loved blanket. We deployed our laundry department to hunt down the missing blanket – we soon found it and quick sharp sent it back to Carlotta, much to her delight.

Five year old Evi recently left her pink teddy at Halveli. We found the teddy in the room after she and her family had left, and so we’ve sent teddy on an adventure to be reunited with Evi.

Meanwhile at Constance Le Prince Maurice our staff gave a baby guest a Prince Maurice teddy as a memento of his time with us. A few years later we received an email from his mother saying it had become his favourite teddy, but through years of love he had almost worn it out.

We can’t resist a tale of love, and so we posted a new teddy to our young guest, a new friend from Mauritius.

Inspired by our passion to create experiences that our guests will remember forever, we also haven’t lost sight that sometimes it’s the little things that make all the difference.

British Airways discovers the high life at Constance Moofushi

British Airways High Life magazine and website has raved about the excellent diving and laid back atmosphere at Constance Moofushi.

In her review Ianthe Butt described the 5* Maldivian resort as a place without stress, where ‘nothing is too much trouble for the staff’.

She says, ‘With soft sand on which to wander, plush rooms, communal areas with collapse-into-me couches, Moofushi is a truly relaxing place to stay.
When you leave you won’t step onto that seaplane, it’ll be more of a drift.’

Chocolate recipes from Constance Lémuria

Recipe 1: Easter chocolate cake

Ingredients (serves 4)

Coconut nougat sponge:

  • 350g egg white
  • 275g sugar
  • 150g egg yolk
  • 200g flour
  • 50g cocoa butter

1. Whip the egg whites and add sugar to create stiff meringue, then at a slow speed add the egg yolks. By hand with a spatula, mix in the sifted flour and cocoa powder.

2. Line a baking tray with baking paper. Bake at 200ºC for 15-20mins. Keep on a cooling rack.

Chocolate Chantilly:

Ingredients

  • 500g whipping cream
  • 150g dark chocolate (semi sweet)

1. Melt the chocolate and keep it warm at 45ºC. Whip the cream to soft peaks and then add the warm chocolate and stir fast.

Stock syrup:

Ingredients

  • 200g white sugar
  • 160g water

1. Boil ingredients together and then put in a chiller to cool down.

Cake setting

1. Cut the sponge cake in to an oval shape (different layers, different sizes from large to small to create an egg shape).

2. Start with the bigger layer at the bottom, moisten sponge with the syrup, then a layer of Chantilly, cover with another sponge layer and repeat until you finish at the top of the egg shape.

3. Let it set in the chiller for at least 12 hours then cover with icing and add Easter decorations.

Recipe 2: Half egg chocolate fondant

Ingredients (serves 4)

  • 400g dark chocolate callebault
  • 300g butter
  • 2g vanilla essence
  • 6 eggs
  • 5 egg yolks
  • 230g white sugar
  • 180g flour

1. Beat the egg yolks and whole eggs together with the sugar until fluffy. Add the vanilla essence and the flour.

2. Melt the butter and pour onto the chocolate to let it melt and then add the egg mixture.

3. Keep in a container in the chiller to preserve or you can bake it straight away in a mold for 12-15 mins at 200ºC.
