What is the Kickstart Fast Diet?

Our chefs, personal trainers and spa therapists have worked with diet co-creator Mimi Spencer to come up with a Kickstart Fast Diet program at Le Prince Maurice, to help and inspire guests to enjoy the Fast Diet lifestyle.

The Kickstart Fast Diet will be available at Le Prince Maurice from November 2013.

The idea behind the Fast Diet is that people eat normally for five days of the week and fast for two. This makes it the perfect holiday diet for guests who also want to enjoy the sumptuous flavours, signature cocktails and fine wines Le Prince Maurice has to offer.

For fast days our chefs have created delicious, fresh dishes including local seafood and locally grown fruits and vegetables with a careful calorie-count listed on the menu.

Highlights from the last few weeks include:

  • A wine dinner at Constance Moofushi hosted by Australian winemaker Geoff Krieger, General Manager of Brokenwood Wines. Read more.
  • An exciting wine menu at Constance Halaveli, designed with fine wine suppliers Gavin Dais and Bastien Gautheron of MMI Dubai, which allowed guests to compare and contrast the distinctive qualities of wines from the New and Old World. Read more.
  • Gerhard Smith of South African winery La Vierge visited Constance Ephélia to help create a sumptuous wine menu around its outstanding Pinot Noir wines and to talk to guests about the wines and how they are produced.
  • Ephélia was also thrilled to welcome leading Indian celebrity chef Sanjeev Kapoor who created a stunning gala lunch for guests at the resort. Read more.
  • Le Prince Maurice and Belle Mare Plage welcomed back Danish Michelin-starred chef Thomas Rode Andersen of the acclaimed Relais et Chateaux restaurant Kong Hans Kaelder in Copenhagen. Recipe: Maldives tuna curry

In the Maldives people do not eat pink cooked tuna like the y do in Western countries. Instead they eat it strong and spicy.

The Maldives tuna curry

The traditional dish of Maldivian fishermen, it is also one of the staples of our Maldivian staff at the hotel. It is natural that we should want to offer our customers this simple recipe with its authentic taste.

Ingredients (Serves 4)

  • 500g tuna
  • Peanut oil: as required
  • 1 onion
  • 10 karipulay leaves
  • 1 teaspoon grated ginger
  • 4 cloves of chopped garlic
  • 3 pandan leaves, cut in two
  • 3 green cardamom seeds
  • 2 teaspoons chilli powder
  • 2 teaspoons curried fish powder
  • 120ml coconut milk
  • Salt: to taste

1. Heat a little oil in a pan. Put some onion in it with the garlic, ginger, curry and pandan leaves. Add the chilli powder and stir with a wooden spatula.

2. Stir in the tuna, cut into 2cm cubes. Sauté the pieces so they are well coated with the spices.

3. Add salt, the fish curry powder, the green cardamom, half of the coconut milk, a little water and let it cook gently. Stir it from time to time.

4. When the tuna is cooked, add the remaining coconut milk and allow it to simmer for another minute. Check the seasoning and set it aside.

Finishing and presentation

Arrange the tuna curry in bowls or soup plates, add a few sprigs of fresh coriander and some strands of pepper.
